Choose your favourite pasta. There is excellent quinoa pasta available now if you like cooked pasta (it’s gluten free).
Or make pasta from zucchini, carrots, beet or sweet potatoes by cutting them in a spiralizer or with your potato peeler if you don’t have a spiralizer.

Soak the dried tomatoes and goji berries in the water for 30 minutes (or overnight). Mix all ingredients except spring onion and garnish in a blender. Chop the spring onion very finely, stir into the sauce. Taste the sauce if it needs extra seasoning and pour over your pasta. Top with sprouts and/or herbs.
