A modern looking chia pudding to cheer you up in the morning or entertain your guests.
It is as delicious and fast as all chia puddings but in a stunning blue colour with extra health benefits. Choose the simple fast version or top with cream and fruit to serve at your next dinner party.
Mix all ingredients in bowl and let the chia seeds soak for at least 15 minutes, stirring occasionally.
Add a layer of cashew cream and (blend 1/4 cup cashew soaked for 2 hours with a little light coconut nectar or light agave syrup and 1 tsp vanilla)
Top with blueberries and blackberries.
