Rosemary Ice Cream with Chocolate Crumbs

Method

Blend all ice cream ingredients except the coconut oil to a smooth consistency in a high-speed blender. Melt the coconut oil over very low heat (can be done in a dehydrator) and blend into the ice cream mix.

Freeze in an ice cream machine if you have one, or pour into a shallow glass or plastic container and place in the freezer. Stir the ice cream mix every 30 minutes until completely frozen. Stirring is important, especially during the first 2 hours, for a creamier, fluffier texture without ice crystals. Once frozen, usually in 3-4 hours, cover with cling film or parchment paper.

Chocolate crumbs

You can prepare the chocolate crumbs in advance or while the ice cream is freezing. Multiply the recipe to have some handy for breakfast and dessert recipes.

Melt the coconut butter over very low heat (can be done in a dehydrator), stir in the remaining ingredients and spread out on a plate.

Assembly

Place the ice cream on top of the chocolate crumbs. Decorate with orange slices, leaves and flowers.
