For a cool, light, delicious and nutritious parfait, pair a classy chia pudding with tremendously heart healthy, antioxidant-rich blueberries. Delightful at breakfast or as a snack or dessert later in the day, particularly in summer. Replace the peaches with kiwifruit in winter. For extra decadence, add a scoop of almond butter.
In a bowl, mix the chia with the cacao powder, liquids, sweetener, vanilla extract and salt. Let the chia absorb the liquid for at least 1.5 hours, stirring occasionally.
Spoon some of the mixture into a parfait glass, top with peach slices, then blueberries and cacao nibs, repeating these layers until the glass is full.
