Chicory with Apple Salsa

This refreshing, yet satisfying dish is packed with nutrients. The bitter vegetables are nicely balanced by the sweet mulberries for a super lunch or a super dinner.

Directions

Half the chicory, cut out the centre and lay the leaves individually onto a plate like boats.

Dice the apples and place in a mixing bowl. Finely chop mulberries, walnuts and spring onion and mix together with the remaining ingredients into the apples. Taste and adjust seasoning. It should be slightly sweet to contrast the bitterness of the chicory. Spoon the salsa into witloof boats (or onto your other chosen bitter greens).
